Gussow, J.D.: Reflections on nutritional health and the environment. The journey to sustainability. J. Hunger & Environmental Nutrition 1 (1):3, 2006.

This reviews the dietary guidelines for sustainability that the author and a colleague proposed in 1986, to encourage individuals to consider the planet's health as well as their own when selecting food. They linked environmental criteria to each of the dietary guidelines. The article argues that the current global food system is unsustainable and builds a case for eating local food. Although the context is the USA, the message is globally applicable and of interest to anyone in sustainable nutrition and sustainable food service.  The full text is available here.
